Why I think it is logical that the universe won't ever end

Stephen Hawkings says the universe must, eventually, end because of the second law of thermodynamics which states,
"Second law of thermodynamics – The entropy of an isolated system not in equilibrium will tend to increase over time, approaching a maximum value at equilibrium".
But I think there is something that he is not taking into account and that is that parts of the universe are already constantly dying while other parts of the universe are coming into existence (stars dying and new stars being born) which means he is wrong to think that the universe is like a system which, as a whole, keeps on going until it burns out. Instead the universe is like a system, like the Ship of Theseus, within which parts are constantly burning out and being replaced by new parts.
