I watched him in the morn', he was smiling
I watched him in the morn', he was laughing
Overjoyed on the bike he was riding
Going 'round with the dogs he raced
I watched him in the 'noon, he was waiting
I watched him in the 'noon, he was running
Excited to where he was going
With family, to another place
We watched him at night, he was sleeping
We watched him at night, he was dreaming
We whispered his name, he was clapping
As we watched his snoozing face
During all this, he was living
During all this, he was growing
In the care of family so loving
Will he become a man one day

Full of love for Enzo. I feel
Full of love for Enzo. I feel some of the nouns are over used. In the first stanza, I would use another word for the second 'laughing.' And the same for 'exciting' in stanza two. Your repetitive lines flow well, though.
